Which arguments make a destination attractive for tourists? Is there a correspondence between what tourists expect from a destination, and how the Destination Management Organizations (DMO) promotes it?

Webatelier.net (www.webatelier.net), a research laboratory of the Faculty of Communication Sciences at the Università della Svizzera italiana (Lugano, Switzerland), conducted a research to define which are the reasons that push tourists to visit a potential destination in the online tourism domain. Moreover the research investigates if the promotion pull factors used by the Destination Management Organization (DMO) correspond to the visitors expectations.

The study, called “Destination Marketing: why tourists like a destination? A research in eTourism and Argumentation”, analyzed the Republic of Malta as a case study destination.
The research aims at giving a practical contribution to the Destination Management Organizations in finding solutions for developing new marketing strategies and to improve and increase the interest of potential customers.

The study received a strong attention by the academic community, it will be presented at ENTER2011 (The 18th International Conference on Information Technology and Travel&Tourism – http://www.enter2011.org) and that it will be published in the proceedings.

Survive a TSA Screening

Wired - Tue, 11/23/2010 - 19:13

Summary: moved the links to file complaints to the bottom -- the other complaint links were already down there, so i'm trying to keep it consistent.

Turn your nose to the air this holiday season, and among the pleasing smells of roasted poultry and freshly baked pies, you may detect a whiff of outrage.

The Transportation Security Administration (TSA) has run afoul of security experts and the general public by introducing some radical changes to how airline passengers are screened -- just in time for the holiday travel peak.

Central to the issue are the TSA's new advanced imaging devices that can see through your clothes and display a picture of your naked body -- and see any weapons or contraband you're hiding under your jeans. Refuse to walk through one and you'll receive an "enhanced pat-down," a policy that has also touched a nerve among travelers.

The debate has gotten so heated, lawmakers are trying to ban the body scanners, and a movement is afoot to encourage travelers to opt out of a full body scan at airports. The "Opt Out Day" protests are scheduled for Wednesday, November 24, but we expect the protests to continue through the rest of the holidays.

If you're planning on protesting the TSA's new policies -- or if you're just an innocent traveler who wants to know your options -- here's our primer.

This article is part of a wiki anyone can edit. If you have advice to add about protesting or opting out, log in and contribute.

Tips for travelers
The current system works by shuttling passengers either through the traditional metal detectors or the Rapiscan body imagers. If you trip the metal detector repeatedly or you decline to go into the Rapiscan, you will get an "enhanced pat-down." This means your body will be closely checked, including the areas near the female and male genitals, by an officer of the same sex.

Airline screening has been ruled legal by some lower courts as an "administrative search" -- that is, the TSA has the right to check you and your belongings to make sure you are not a threat to aviation. However, the Supreme Court has not specifically held that airport screening searches are constitutionally reasonable administrative searches.

The Electronic Privacy Information Center (EPIC) has filed suit (PDF link) against the TSA, challenging the use of the scanners and "enhanced pat-downs" as being violations of multiple federal laws, as well as violations of the Fourth Amendment of the Constitution.

It's not clear how far legally these searches can go. For example, could the TSA require a cavity search and if you refused one, could you be fined? That's an unknown legal question, but chances are if the screeners have that much reason to believe you are carrying contraband, they will involve the police.

If you do want to refuse a screening and a patdown, you can now do so without a fine. You have the right to refuse the screening at any time. If you do refuse, however, the TSA officers will escort you from the airport, you'll have to give up your flight, and you won't be allowed to get back into the security line. If you refuse screening and attempt to reenter the secure area, the checkpoint will be shut down and you may be subject to civil and criminal penalties.

The TSA can't detain you at this point -- they have to notify the police to detain you. There are usually plenty of police posted at the TSA checkpoint, however, and if a police officer asks you to stop, you must do so and provide ID.

Finally, here's Ed Hasbrouck on how to get a refunded plane ticket if you decline to go through screening and refuse to be patted down. It's a long shot, but possible.

Tips for protesters
If you're planning on protesting, here are some additional tips:

Do not make jokes about bombs, hijacking or carrying banned materials.

That said, the screening line is not a Constitution-free zone. You may express your displeasure and political opinions, and wear a shirt that makes fun of the TSA. There's a fine line between free speech and impeding the TSA, and the latter can result in a fine.

Likewise, the Fifth Amendment applies as well. You have the right to remain silent. You don't have to explain anything or respond to any officer's questions. You do have to show ID and if you don't have one with you, whether or not you'll be allowed to fly is at the TSA's discretion.

Whatever you do, remain courteous. Remember that the TSA workers are humans with jobs to do.

Photographing or recording the TSA or law enforcement officials? The TSA says they have no prohibition against you recording the screening protest, but local and state ordinances vary when it comes to recording in public, especially when it comes to recording the police. Quite a few people have been arrested and prosecuted for recording police officers, and while you may be within your rights, you might have to prove that in court or sue the cops later after you've been arrested.

Taking off your clothes as a protest? Getting totally naked is illegal and will get you arrested. As for undressing, again, local and state statutes--and your experience--will vary. As a matter of principle, stripping down to bike shorts and a thin ribbed tank top, or doing as @furrygirl did and stripping to a camisole and panties, is clearly protected First Amendment speech, but the ruse did get the bike shorts guy arrested in San Diego.

Going commando under a kilt? Truly wicked.

Thinking about web-site redesign?

Wired - Tue, 11/23/2010 - 16:16

Summary: Important issues to cover when embarking on your next web design project

Important issues to cover when embarking on your web design project
1. Setting Marketing Goals
It’s well and good leaving the layout and graphic design of your website home page to a web designer to create on your behalf if all you want is something that looks good. It is vital however that some consultation occurs with an experienced Internet Marketing person in advance of any draft design process such that your organisations marketing objectives can be integrated into the layout design. Every small piece of space on your home page should be defined for function and tie-in with clearly considered marketing priorities. When this is done properly you end up with with a website that engages marketing strategy and that represents you effectively.

2. Content Preparation & Production
Not alone does your content represent you, your experience and expertise, it also must be focussed and above all relevant to your business services and products. Website content has the greatest impact on search engine ranking performance and therefore the overall effectiveness of your website. Don’t rush content. Write it carefully and professionally.

3. Web Design (Graphic Design)
Well finished graphics, colour choices and related branding choices to suit your business area are important. Just like wearing a tie to a job interview, if it’s missing it becomes a factor (a concern) with respect to the credibility of your business online.

4. Usability and Seamless Navigation
All navigation schemes should be intuitive (not requiring any learning curve) for website visitors. You have control of how and where visitors move about your website. Use this control to achieve marketing goals in a simple and easy manner.

5. Build Quality and Search Engine Optimisation (SEO)
Good graphic design has to be married with W3C compliant HTML and CSS production to ensure your website renders as required across all popular browsers and is future proofed as much as possible. At this time it is important to ensure that your designer also takes into account best practice SEO techniques. There is no substitute. It cost nothing to optimise a website at build-time and it is a vital component of the overall potential of the website to perform well in search engine rankings.

6. Deployment & Web Site Hosting issues
Often overlooked, but critical to search engine performance is where you host your website. Simple rule to follow:- Select a hosting company that can provide you with an IP addresse in your local target market. If your target market is Ireland, then ensure you select a locally hosted web hosting service (with an Irish IP address range). Most search engines (in particular Google) bias search results locally. Google looks to your browser IP address to ascertain where you are and will serve up what it believes is relevant results to you. Google takes both IP addresses into account.

7. Internet Promotion – Driving the website to achieve success
Just like a potted plant, your website needs constant attention if you want to gain long-term return from investment in any new web design. Having a great website designed and launched to great acclaim is not the end of the process but the beginning.

Every new website launched will effectively be ”sandboxed” by the popular search engines. i.e. not appear for searches relating to products or services detailed on the website. It will take upwards of six months of active search engine promotion and Internet Marketing to achieve a page one listing for searches relating to exact content on your website and longer for more popular generic terms.

The efforts to achieve search engine presence includes regular updating and addition of relevant content to the website, link building (inbound) including search engine and directory submission. Engaging in the process even on a small scale will reward you with increased traffic and more enquiries/sales for your business.

Shoppping for your girlfriends

Wired - Tue, 11/23/2010 - 10:20

Summary: shopping on boutiques.com

Boyfriends, husbands and secret lovers! get ready for the revolution that will change your lives forever!!!!!!!!! is called BOUTIQUES.COM and is your free pass to eternal couple bliss!

i have been in a relationship for seven years now. my boyfriend is great, lovely, the best i could ever dream of...but when it comes to gifts, not so much! and not because he's ever forgetting my birthday, our anniversary, valentine, christmas, hannukah (yes, i am that shameless) and other occasions for which i suggest "spontaneous" gifts "just because i love you"...no, he remembers all these dates. Nor that he buys me hiking shoes or a Wii to get me in shape. We’re over that (year 4).

By now he even stopped asking me if my Chloe bag is light and easy to carry, if my 10 cm McQueens are comfortable enough and my Herves Leger dress that makes me faint is keeping me warm (year 6).

The problem is that even when he thinks he got me the right gift he didn’t. is almost what I wanted but not really. (sorry baby, yes, i lied even the last time when i said the bracelet is lovely!). I know that that for you black is black, short is short and a dress is just as nice (especially if is slightly shorter) as the other seven I’ve been trying for the past hour.

Well, gentlemen, you will never have to worry about your gifts being rejected or frown upon ever again! Because St.Google listened to your, well, our prayers and from now on we will all live happily ever after with the exact gifts that we wanted but still coming as a nice surprise.

Boutiques.com is the new Google answer to shopping. Is great not only because has so many options but mostly because you can create based on your preferences your own boutique, with all the bags, dresses, shoes, accessories that you like, and share it with other people. Therefore from now on, you can never say "i didn’t know what to get you, cause i don’t know what you like!” well, now you do!!! Is there, on my Boutique personal page.

The site is great for us women too. Is very addictive (at 2 am I am still chatting with my gal pal on Facebook sharing shoes links that we just adore) is simple to use, helps you define your own style, love or hate an item(see, there is true passion in shopping) and seems easy to buy by taking you directly to the merchant site.

Boutiques.com is still in a Beta version, so we expect some more improvements. The site is not responding fast enough to the love-hate relationship, some of the external links are not valid and the social platform for interaction is very limited. Yes guys from Google, we need to talk more to each other and say how much we love/hate that new Celine Luggage bag! Also, we need more accessories and jewelry (imagine how many guys would be so relieved to actually know in advance what kind of ring she would like). However is a really good start and I am looking forward to see it evolve.

Therefore I expect to see from now on girlfriends screaming of true joy when opening that gift box, boyfriends keeping their heads up high satisfied with a job well done (and super easy). All together, I truly believe that relationships will become healthier, happier and longer. That the rate of divorces will drop to such levels that lawyers will be forced to finally get a real job.

Can’t wait to share with the world my own Boutique now that Christmas and Hanukkah are just around the corner! Happy shopping everyone!!!

How to create a completely free website with a root level domain name and unlimited space.

Wired - Tue, 11/23/2010 - 00:52

Summary: In this article I will teach you how to create your own website with a root level domain name and unlimited space, this article is only recommended for the use of advanced web developers.

This article is recommended for advanced web developers only.

Have you ever wanted to create a website but have been let down by countless hosting companies because of limited space or bandwidth or some hard to remember sub-domain name? Well, I have found the solution. This will be a slightly complicated process so please follow along carefully.

The first thing that you will need to do is set up a hosting account at x10hosting.com. Just sign up, then go to your email account and find the confirmation email that they sent you, click the link and activate your account.

Next, you will need to navigate to your hosting cpanel by logging into your hosting account at x10hosting.com, clicking the hosting button at the top of the page, then click the login to cpanel button near the middle of the page.

After you have navigated to cpanel it is time to set up your website, I recommend setting up your homepage first so that it says "Site currently under construction" so that your visitors know that you are working on getting the site up, you can even leave a little message that explains what all your doing to get the site up.

After you have set up your homepage you are going to want to start setting up your root level domain name. You do this by going to dot.tk and clicking Web Domain on the menu bar at the top. Follow the sign up process, but when you get to the page where it asks weather or not you want to use dns for this domain click use .tk dns. After you click that go to your hosting account and look for the ip address of your server and type that in .tk in the text box right beside your new domain name then click next.

Now you will want to go back to cpanel and click add-on domains. When you get there type the domain name that you just set up at .tk in the text box labeled New Domain Name, In the text box's labeled username just put the username and password that you used to set up your hosting account. Click in the text box that says Document Root and erase everything in it and click Add domain.

After you get done with all of that your going to want to go back to cpanel and click Advanced DNS Editor. While keeping the DNS editor open, open .tk in another window if you closed it and click Modify a Domain in the menu to the left. Select the domain that you just set up and click modify. Now Copy all of the information in cpanel to .tk. now click Next at the bottom of .tk and YOUR DONE!!!!

Now just wait about 30 minutes and navigate to your new domain name whatever.tk and your site should be up. If it does not work Just try to follow this article again untill it does work. If you absolutely cannot get it to work email me at ldhacker@live.com and I would be glad to help you.

Protect Your Data During U.S. Border Searches

Wired - Mon, 11/22/2010 - 22:53

Summary: /* Encrypt everything */

[[Image:DHScustoms.jpg|thumb|630px|left|Photo by juicyrai/Flickr/CC]]
The mandatory stop at the U.S. Customs counter when returning from an international trip usually just involves answering a few questions and getting a stamp on your passport.

But recently, we've seen incidents of computer security experts with ties to WikiLeaks and white hat hackers being stopped by government agents and having their laptops and phones thoroughly inspected.

Unless you work in computer research, or if you have ties to whistleblowers or cybersecurity journalists, the chance is very, very slim that your electronics will be searched. But even if you don't think you're up to anything that would arouse the suspicion of the Feds, you should still take precautions. Also, the threat of theft or snooping is something you should pay attention to, no matter how far from home you wander.

Note that these rights extend only to U.S. citizens. Any foreign visitor can be refused entry to the country by border officials on almost any grounds, even if you have a visa.

If you're flying internationally, be prepared for a search and protect yourself before you travel.

Some of this information is elementary, but many readers may not be aware of even their simplest options for personal digital security. Furthermore, this article is part of a wiki anyone can edit. If you have advice to add, please log in and contribute.

Know the law
Under the "border search exception" of United States criminal law, international travelers entering the United States can be searched without a warrant by U.S. Customs and Border Protection. CBP is part of the Department of Homeland Security.

Under the Obama administration, law enforcement agents have aggressively used this power to search travelers' laptops, sometimes copying the hard drive before returning the computer to its owner. Courts have ruled that such laptop searches can take place even in the absence of any reasonable suspicion of wrongdoing.

If you are asked to surrender your computer, phone, USB drives and any other electronic devices for inspection, you must comply. CPB officers have the legal authority to inspect anything you carry into the country, including your electronics. You should agree to these inspections or else face detention.

If the CBP officers inspect your computer or phones, be aware of the possibility that they could be installing firmware or software to monitor your activity. They are probably also going to copy as much information as they can off your hardware before returning the items. In the end, they may decide to keep them indefinitely.

However, it is well within your rights to secure your data using passwords and encryption, and to keep your passwords and keys secret. You also have the right to remain silent under questioning. You should consider invoking that right for even questions as seemingly innocuous as "Were you traveling for business or pleasure?" Lying to the Feds is a federal offense.

Something to note about this "right to remain silent" issue: It has never been decided by the courts whether these border searches are civil or criminal. You have the right not to be a witness against yourself in a criminal matter. It is possible that this right does not extend to what is essentially a civil, not criminal, search of your laptop. Of course, if you might be incriminated by your answer, the right is clearly yours. But do consider this gray area before invoking a right that may not exist given your specific facts.

Either way, if you are a U.S. citizen who is not considered a suspect in a criminal matter, you will most likely be released after the search. The Feds may keep your laptop and your phone, but you will most likely walk even if you remain silent the entire time.

Password-protect everything
Password-protect your laptop. You most likely have already done this elementary step, but if you haven't, here are instructions for Windows and Mac OS X. Also, you can lock down a Linux laptop using grub 2.

Set a pass phrase on your phone. Each mobile operating system is different, but the option is usually available in your phone's settings.

For iPhones, go to Settings > General, and turn on the passcode lock. Turn off the "Simple Passcode" option, which will allow you to use a longer, more secure passcode. Also, enable the "Erase Data" option, which will zap everything on your phone after 10 failed passcode attempts. We have some additional tips in our "Secure Your iPhone" article.

For Android phones, go to Settings > Location and Security. Set an unlock pattern and make it required. From the Location and Security screen, you can also set an additional password to use your SIM card, and set an additional password to access stored credentials.

Note: If asked to surrender your passwords, you can refuse. Even if the passwords are bypassed, you can add a second layer of protection by encrypting all of your data.

Encrypt everything
One of the most popular pieces of software for encrypting your hard drive is also free and open source. It's called TrueCrypt, and it's available for Windows, Mac OS X and Linux. It provides on-the-fly encryption for all of the contents of your hard drive.

TrueCrypt can be used to encrypt any disk volume, so you can use it to protect your USB sticks and external hard drives, too. After installing TrueCrypt on one of these devices, set it to Autorun. Then, you just enter a password when you plug in your drive, and you can use it like you normally would.

It also has some additional protections in place if you're forced to reveal your passwords.

There's another popular system called FreeOTFE. It's free software and has many of the same features.

Apple offers full encryption of all user data by activating FileVault on Mac OS X.

Additionally, you should encrypt your passwords, contacts and saved e-mails using a "data vault" app. Keeper is popular (free to $30) since it works on all major desktop and mobile OSes, and it can keep your data in sync between your desktop and phone.

If you have an Android Phone, you can encrypt all of your chat messages and phone communications using simple apps from WhisperSystems. Additionally, because some encryption keys can be fetched from memory, consider not using hibernation.

Netizens should be aware, however, that encryption is often used as a presumption of guilt. What, you don’t have anything to hide?

Cloud services are your friend
When it comes to storing sensitive documents or lists of contacts, your laptop may be the most convenient place to keep your data, but it's hardly the safest.

Before traveling, store your sensitive documents using a cloud storage service. You can access them from anywhere with an internet connection, and if your laptop ends up getting seized, searched or stolen, just download your secure documents.

Dropbox is a popular service with both free and paid plans, and it allows you to encrypt your cloud-based storage volume with TrueCrypt. The Dropbox wiki has some thorough instructions. Another option would be CloudSafe, an encrypted cloud storage provider outside the US where you do not need a specific client software.

For an extra layer of security, group together any sensitive documents and zip them up in an encrypted archive before uploading them.

On Macs, you can use the Disk Utility to create a new disk image, and then protect it with 128-bit AES encryption.

On Windows or Linux PCs, use the free software tool PeaZip to create an archive protected with AES encryption.

Ship Ahead
What better way to foil CBP than by giving them nothing to look at? Remove the hard drive from your computer and mail it to your destination ahead of your arrival. Just be sure to send it with tracking!

I’m of two minds about Assassin’s Creed Brotherhood, released Tuesday for Xbox 360 and PlayStation 3. On the one hand, I enjoyed it, and would recommend it to anyone held in absolute thrall by last year’s game. Stealthily clambering over the rooftops of 15th-century Italy and assassinating your political enemies is still a potent gameplay formula, and Brotherhood’s new multiplayer mode puts a unique spin on things by adding a unique factor: human intelligence.

On the other hand, this is the laziest cashed-in, churned-out sequel (without the name Guitar Hero on it) of the year. The whole thing feels like it should have been a downloadable add-on. In essence, it’s just a pack of new levels for Assassin’s Creed II — same characters, same moves, same everything. The new features Ubisoft grafted onto the game are largely inelegant.

Holistic Approach in Medicine

A Holistic View

A holistic approach in medicine is intended to be a process of healing that takes into consideration the mind, body, and spirit of the patient. Holistic practitioners seek to incorporate not only traditional medical treatments, but also complementary and alternative therapies. These practitioners feel that by so doing, they not only treat the medical condition or disease but also contributing factors such as state of mind and spiritual beliefs. The idea is that the patient is more than their diagnosis, but instead is a unique individual.

A holistic approach resembles more of a team approach or partnership between the physician and the patient. Each has equal say in therapies chosen and bears responsibility for their participation in developing a treatment plan. However, most holistic physicians place responsibility for the patients own well-being squarely on their own shoulders.

In developing a treatment plan, the doctor and patient consider not only current health conditions but also lifestyle, personal beliefs, and preferred habits of the patient. The overriding goal behind holistic medicine is respect for the individual and their approach to their own healing.

One of the founding principles behind a holistic approach in medicine is unconditional love. It is believed that one must first love oneself unconditionally, and only then can you truly love and support the health and well-being of another. It is this loving support for which holistic medicine is best known. The loving, supporting nature of this kind of medical care is not swayed by attitude, behavior, or poor choices of the individual, but rather offers support for the growth of a person even if that sometimes requires a stern hand.

The American Holistic Medical Association exists to provide support to physicians who utilize a holistic approach in medicine. The AHMA holds both national and regional conferences to help connect physicians in a relaxed friendly atmosphere. Here these physicians can share knowledge and offer each other encouragement in professional self-actualization.

However, they also invite other professionals such as nurses and clinicians who wish to help propel the medical community back to its original purpose of healing the whole person. Many members feel that the current health system no longer advocates adequate prevention and health monitoring, but rather serves a specific business model and profit margin. While holistic medicine promotes loving support, a holistic physician is merely a guide and patients are ultimately responsible for their good health.

For most of us, memories of holiday family gatherings don't conjure up images of love, warmth and forgiveness. Instead, they remind us of the hot sting of shame, failure and defeat.

The year your apple pie was raw in the middle. The year your canned cranberry sauce gave everyone food poisoning. The year you tried to deep fry a turkey and almost burned the house down.

Don't fail again -- this year, it's Thanksgiving FTW!

Make a Cherpumple

Wired - Fri, 11/19/2010 - 00:28

Summary: /* Cherpumple Pie Cake */

Quite possibly one of the unholiest culinary creations ever to ride into town on the dessert cart, the Cherpumple is a six-layer threat of sickening proportions.

It's a triple layer cake with a pie baked into each layer. To make the bottom layer, you bake an entire apple pie inside a spice cake. The middle layer is a pumpkin pie baked inside a yellow cake. Top it off with a cherry pie baked inside of a white cake. Once finished and frosted, it's a foot tall and packs an astronomical number of calories per slice. Diabetics and health-food devotees will run screaming.

The madman responsible for this beast is author and funnyman Charles Phoenix. The self-described Ambassador of Americana calls his monster cake/pie hybrid "the turducken of desserts." He says he whipped it up as a matter of convenience -- instead of having to sample several different pies and cakes after a holiday celebration, why not just bake them all together? His sick vision is your sweet tooth's wildest dream come true.

Tip: For the best results, use pre-baked pies or frozen pies. Also, use boxed cake mix. This is primarily for rigidity: while cakes and pies made from scratch are delicious, they tend to be delicate. The pre-fab stuff is unnaturally sturdy. Also, if you make everything from scratch, you have to mix and bake six full desserts before you can assemble the Cherpumple. That's an all-day affair. Preserve your sanity by going frozen, boxed or pre-made.

Cherpumple Pie Cake
Here's the recipe from Charles Phoenix's website:

1 8" frozen pumpkin pie<br />
1 box spice cake mix<br />
1 8" frozen apple pie<br />
1 box yellow cake mix<br />
1 8" frozen cherry pie<br />
1 box white cake mix<br />
eggs and oil according to the cake mix<br />
3 tall tubs of cream cheese frosting<br />
3 8.5" round cake pans<br />

"Bake pies according to instructions and cool to room temperature overnight. Mix cake batter according to instructions. For each layer pour about 1 1/3 cup of batter in the cake pan. Carefully de-tin the baked pie and place it face up on top of the batter in the cake pan. Push down lightly to release any trapped air. Pour enough batter on top to cover the pie. Bake according to box instructions. Cool and remove from pans the frost it like you mean it."

Charles asks that you send him photos and videos of your attempts to recreate his beastly belly-buster.

Time Your Thanksgiving Dinner

Wired - Thu, 11/18/2010 - 23:09

Summary: /* Relax */

Thanksgiving is more than just turkey or ham. There's mashed potatoes, yams, casseroles, stuffing, dressing, cranberry sauce, gravy and countless other side dishes. It's enough to overwhelm even a well-trained professional chef -- to say nothing of the rest of us.

The key to making your Thanksgiving dinner come off well-paced and without a hitch is careful planning. Here's our guide to making sure everything hits the table hot, and at the right time.

This article is part of a wiki anyone can edit. If you have advice to add, log in and contribute.
<br clear="all" />

Plan ahead
Professional chefs don't just stroll into the kitchen at 5pm and start sending out perfect dishes. They plan ahead, and so should you.

Write down a menu. List of all the dishes you plan to serve, build an ingredients list and buy all your supplies well ahead of time.

Look up how long each recipe says it will take, paying attention to both the prep time and the cooking time. Then start plotting out the order in which you should work, starting with the longest recipes.

If you're brining your turkey, prepping and chilling the brine is usually a two-day process, and your turkey has to soak overnight.

Some sides, like cranberry sauce, and some desserts are generally served cold, so make them well ahead of time and store them in the fridge.

Par cook
"Par cooking" simply means "half cooking." For example, if you don't want to reheat fully-cooked mashed potatoes, you can still cook the potatoes about half way the day before and then finish them up in half the time.

Vegetables are also good candidate for par cooking. Par cook your green beans and then just heat them up before serving. Breads and pies are also great candidates.

It may sound a little unappealing -- after all, you want everything to taste fresh -- but most dishes turn out just as tasty when par cooked. It's the secret weapon of even the fanciest restaurants.

Be aware that some foods, like meats, don't respond well to par cooking. But you could get most of your sides halfway done a day early.

Enlist help
It's impossible to baste a turkey, kneed dough for rolls and dress a salad all at the same time. Deputize some helpers and get them in the kitchen with you.

You don't need to be a dictator about it, but make sure everyone helping you knows what they're doing, has a place to work and has the proper knives or tools. Print out instructions for each task to keep them from asking unnecessary questions.

Relax
Thanksgiving dinner is a stressful time for many people, but with a little planning, some help from friends and family and a few glasses of wine, you can get everything together like a pro and have plenty of time to relax and enjoy the meal.

Roast a Turkey

Wired - Thu, 11/18/2010 - 22:32

Summary: /* Brine it */

[[Image:Turkeyroast2.jpg|thumb|left|630px|A beautifully roasted turkey. Photo by Kimberly Vardeman/Flickr/CC]]

Thanksgiving: a time for families to get together and fight like cats and dogs over the delicious bits of golden, perfectly roasted turkey. Or maybe just fight like cats and dogs over nothing.

If you're hosting a Thanksgiving dinner, we can't stop the old sibling resentments from bubbling up, but we can help you make sure your turkey is golden, moist and delicious.

Here's our guide to roasting the perfect turkey.

This article is part of a wiki anyone can edit. If you have advice to add, log in and contribute.

What you'll need
* Turkey. Plan on about one and one half pounds of uncooked turkey per person. Much of that weight is bones, so the final portion works out to more like 8 to 10 ounces per person. When in doubt, use an online calculator. Not all turkeys are sold equal -- for the best flavor, avoid the frozen birds and go with a local meat shop if you can. Ask your butcher about freshness and buy organic if that's important to you. Also consider a kosher turkey.

* Large roasting pan and V-rack. Make sure you have something that's big enough to hold your turkey, but that still fits in your oven. If you don't have a V-rack, just line the bottom of your roasting pan with a dozen or so carrots.

* Meat thermometer. Forget those pop up thermometers that come pre-packaged with some turkeys and get a real thermometer.

* Turkey baster. Yes, it's more work to baste the bird as it cooks, but the results are worth the effort.

* Kitchen twine. For tying the turkey's legs together.

* Stock pot or brining bag if you want to brine your turkey, which we'd recommend. It's juicier and tastier that way.

Brine it
[[Image:TurkeyBrine.jpg|thumb|630px|left|A turkey in its brine. Photo by Scott Feldstein/Flickr/CC]]

<blockquote style="margin-left:20px; padding:10px 0; border-top:5px solid #333; display:block; float:right; width:200px; font-size:12px; color:#666;">Tip: Some turkeys are already brined before you purchase them. Make sure your turkey hasn't been brined before. Otherwise, the meat will be very salty.</blockquote>
To bring out the flavor in your turkey, brine it before you cook it. Brine is simply a mixture of salt water with some spices and herbs added. Brining the bird helps ensure the salt penetrates into the flesh and brings out the full flavor while keeping the meat moist and juicy.

Ideally, you'll want to prepare your brine a day or two before the main event. You'll need a large stock pot big enough to totally submerge your turkey in the brine, or just use a turkey brining bag. You have to keep the bird chilled while you brine it overnight, so which method you use will depend on whether or not your stock pot will fit in your fridge.

This article is part of a wiki anyone can edit. If you have advice to add, log in and contribute.

Make the brine
In a large stock pot, combine two gallons of water and two cups of kosher salt. Add about a tablespoon each of black pepper, rosemary, sage, thyme, savory, bay leaves and whatever other herbs or spices you'd like and bring the whole thing to a boil.

Once the salt is dissolved, remove the pot from the heat, and let it cool to room temperature. Move it into the fridge overnight, or for at least an hour or two to get it cold.

Dunk the bird
To get the turkey ready, remove the gizzard, neck and any other extras included with your turkey. Wash the bird both inside and out.

Drop your turkey directly into the cold brine and put the stock pot in the fridge.

If your fridge isn't big enough, use a brining bag. Put the turkey in the bag, fill up the bag with brine and place it in a cooler or large bucket. Pack ice around the bag and put it in the coolest spot in your house, like the garage. Just make sure the temperature stays around 40°F (4°C).

If your turkey is of average size (around 10-12 pounds), 12 hours in the brine should do it. A bigger bird (around 16-20 pounds) should soak for 18 hours.

Or, don't brine it
If you brine a turkey, you may not be able to use the roasting juices to make a proper gravy. If you want to make a pan gravy, don't brine the turkey.

Alternatively, just rub it thoroughly inside and out with kosher (non-iodized) salt. You can use flavored salts, adding various herbs and spices to the rub if you wish. Do this as the bird defrosts in the refrigerator, approximately 24-48 hours before roasting.

Roast it
Pull your turkey out of the brine and place it breast-side down on your V-rack inside the roasting pan. Pour a cup or two of water into the roasting pan underneath the turkey.

Preheat the oven to 425°F (220°C) and move the oven rack to its lowest position.

If you aren't worried about fat, brush a bit of melted butter over the turkey. This will help ensure crispy, golden skin. Alternatively, you can smear it with a garlic-herb butter. If nothing else, rub the bird (inside and out) with salt, pepper and any other seasonings you want.

If you're making stuffing, now would be the time to stuff it inside the bird. You can also stuff it with coarsely chopped root vegetables. Once stuffed, tie the back legs together using your kitchen twine.

When the oven is hot, place the turkey inside. Cook the turkey for 15 minutes, then lower the temperature to 350°F (175°C). Roasting it for a short period at the initial higher temperature helps make the skin crispy.

There are all sorts of formulas for how long your should roast your turkey. The rule of thumb is 90-120 minutes, but every bird and oven are different. The best way to do it is to use your meat thermometer. Cook it until the breast temperature reaches 165-170°F, and thigh temperature reaches 175-180°F. In Celsius, that's 75°C for the breast and 80°C for the thigh.

Every half hour or so, use your baster to suck up the pan drippings and pour them onto the back and the legs.

Rest it
When the breast and leg temperatures are where they should be, pull your turkey out of the oven and cover it with an aluminum foil "tent". Let the turkey rest at least twenty minutes before serving.

Carve it
Once your turkey has spent 20-30 minutes under the tent, carve it up. You'll need a carving knife and a carving fork, a big cutting board, and a big platter.

Deep Fry a Turkey

Wired - Wed, 11/17/2010 - 23:54

Summary: /* What you'll need */

[[Image:Turkeyfry1.jpg|thumb|left|300px|Photo by Gunther Hagleitner/Flickr/CC]]
Thanksgiving is a quintessentially American holiday, and there are few cooking styles more American than deep frying. So why not put the two together and deep-fry your turkey?

If your skills in the tool shed are stronger than your skills in the kitchen, then you'll probably find it pretty easy to deep-fry a turkey. But you should be aware that open flames, splattering boiling oil and deep-fried foods are all pretty dangerous. After mishaps with dried-out Christmas trees, deep-fried&ndash;turkey disasters are the most common cause of holiday fires.

Luckily for you, we've put together this handy guide so your deep-fried turkey is not only delicious, but safe.

This article is part of a wiki anyone can edit. If you have advice to add about frying that bird, log in and contribute.
<br clear="all" />

What you'll need
* A small to medium size turkey. Under 18 pounds works best. Any larger, and the skin will likely burn before the inside meat is fully cooked, ruining one of the best things about a deep-fried turkey: delicious crispy skin.

* A very large stock pot. You need a pot large enough to completely submerge your turkey in oil. Generally, something in the 40-to-50-quart range will work. Head to your local restaurant-supply store to find large, cheap pots.

* A fryer basket or handle. While you're at the restaurant supply store, pick up a fryer basket or turkey brace large enough to hold your bird, yet small enough to fit inside your pot. Instructions for making one yourself are in the next section.

* An outdoor burner. Don't even think about doing this inside your house.

* Thermometers. Both an oil/candy thermometer with a long probe and a meat thermometer would be ideal. An infrared thermometer for checking your oil temperature is even better, since you can check it from a distance.

* A lot of oil. Head to one of the big-box stores and stock up on peanut or sunflower oil (or another oil with a high smoking point)

* Protective gloves, goggles and jacket. Cover up good to prevent any splattering oil from sending you to the emergency room.

* You can use a turkey fryer if you want. They're sold at camping stores and big-box hardware stores. But you can probably find everything you need for less money -- especially if you already own a propane grill, a large pot or both.

Preparation
The first thing to do is make sure your turkey is completely thawed and defrosted -- water (from ice or melting ice) and hot oil make a very dangerous combination.

Remove the neck and giblets if there are any, along with a pop-up thermometer if your turkey came with one.

You'll need a metal basket or handle to submerge the turkey into the oil. Many companies make fryer baskets big enough to hold a turkey, because of the popularity of these deep-fried holiday treats.

If you don't have a deep-frying basket large enough to hold a turkey, you can make your own handle. Place the turkey on its shoulders (where the head was) and run some heavy gauge wire through the body, just beneath the breast (by the wings). Pull the wire through and loop back around, pulling it through several times to make a handle. Twist up any excess wire so you don't cut yourself and be sure to test your handle to make sure it is strong enough to pick up your turkey.

Now it's time to get your burner ready. Find a flat, stable surface outside to hold your burner. Make sure the area is dry and well ventilated and that there's nothing flammable in the vicinity. Keep in mind that some oil will probably spill or spatter, and that new deck you built over the summer may gain some unwanted character. Use the neighbor's lawn if they are away visiting for the holiday.

<blockquote style="margin-left:20px; padding:10px 0; border-bottom:5px solid #333; border-top:5px solid #333; display:block; float:right; width:200px; font-size:12px; color:#666;">Tip 1: If you're brining your turkey, use the same pot for both brining and frying. Just measure the displacement using brine instead of water.<br />Tip 2: If you're too lazy to measure, just use 3 gallons of oil. It usually comes in a box just that size. If it isn't enough, assume a nose-dive orientation into the fryer, leaving the ankle and keister high and dry (nobody eats those parts anyways).</blockquote>
Find out how much oil you'll need by performing a quick displacement measurement. Fill your pot with water and immerse the turkey. The water level should cover the turkey completely, but still be five or six inches below the rim of your pot. Remove the turkey and note water level -- this is how much oil you'll need in the pot. Aren't you a little Archimedes?

Now wash your turkey inside and out, and pat it dry. Make sure it is very dry. Then season it however you would like.

Thoroughly dry both the pot and the turkey before continuing

Cooking
Deep-frying a turkey is a really a two-person job. You need one person to always be with the turkey -- keeping an eye on the pot, making sure the oil isn't smoking and that the turkey is cooking properly -- and another person to help out.

To get started, fill your completely dry pot with oil up to the point you noted earlier when you took your volume measurement.

Light your burner and let the oil heat up to about 350 degrees Fahrenheit, or 175 degrees Celsius.

Put on the protective gloves, goggles and jacket. Using a metal hook to hold your wire handle, pick up the bird. Have the person helping you turn off the burner while you put the turkey in the oil -- this will prevent one of the major source of deep fryer accidents, spattering oil hitting the open flame.

Turn off the burner and gently, slowly lower the bird into the oil. The reaction -- even with a completely dry bird -- will be violent. Oil will probably bubble up and spray on your gloves. Be extremely careful and lower the turkey into the oil slowly to minimize splattering. Don't ever just drop it in -- this is the No. 1 mistake first-timers make.

Once your bird is in the oil, the hard part is over. Relight the burner, and you can relax a bit and set the timer -- generally allow between three and four minutes of cooking time per pound of turkey. A 15-pound turkey will take around 45 minutes.

Never leave the turkey fryer unattended.

Once the turkey has cooked for the allotted about of time, check to make sure it's an even, golden brown. If it passes the visual check, remove the bird and check the internal temperature with a food thermometer. The internal temperature should be 165 degrees to 170 degrees Fahrenheit in the breast and 175 degrees to 180 degrees Fahrenheit in the thigh.

When your turkey is done, allow it to cool, and remove the wire handle.

Safety Tips
* Watch this safety hazards video from Underwriters Laboratories before proceeding.

* Always keep a grease fire extinguisher handy, make sure your extinguisher is rated for grease fires.

* Don't cook the turkey on a wood deck. If the fryer boils over the flame will immediately cause a violent fire and your deck will be fuel. Instead, place the fryer on a stable place where it will not tip over.

* Make sure other people -- especially children -- and pets stay away from the cooking area.

* Allow the oil to cool completely before recycling or storing.

* Immediately wash hands, utensils, equipment and surfaces that have come in contact with raw turkey.

Further expediency
If 45 minutes it too long, use Thermite to prepare a turkey in under a minute.

Introduction
The iPhone 4 is a slate smartphone developed by Apple. It is the fourth generation of iPhone, and successor to the iPhone 3GS. It is particularly marketed for video calling, consumption of media such as books and periodicals, movies, music, and games, and for general web and e-mail access. It was announced on June 7, 2010, at the WWDC 2010 held at the Moscone Center, San Francisco, and was released on June 24, 2010 in the United States, the United Kingdom, France, Germany and Japan.

The iPhone 4 runs Apple's iOS operating system, the same operating system as used on previous iPhones, the iPad, and the iPod Touch. It is primarily controlled by a user's fingertips on the multi-touch display, which is sensitive to fingertip contact.

The most noticeable difference between the iPhone 4 and its predecessors is the new design, which incorporates an uninsulated stainless steel frame that acts as the device's antenna. The internal components of the device are situated between two panels of chemically strengthened aluminosilicate glass.[8] It has an Apple A4 processor and 512 MB of eDRAM, twice that of its predecessor and four times that of the original iPhone. Its 3.5-inch (89 mm) LED backlit liquid crystal display with a 960×640 pixel resolution is marketed as the "Retina Display". Some iPhone 4 buyers have reported signal reduction when the phone is held in certain ways, especially in the left hand, as the antenna problem is in the bottom left corner of the phone's side casing. The company has offered customers a free case until September 30, 2010, or a refund within 30 days of purchase, as cases have been shown to correct this antenna problem. The latest operating system release, iOS 4.1, added functionality such as high dynamic range photos and the Game Center.

Steps
If you’ve got a 4th-generation iPhone ("iPhone 4"), one of the things you probably want to do is put DVD movies on it. Since the new iPhone 4 display has 960*640 resolution, movies will do look great on the new device, and it’s a lot easier to carry around than a laptop or portable DVD player.

Everyone's favorite free open-source DVD ripper, HandBrake, can extract video from unprotected DVDs as well as from Video_TS folders and individual VOB files. If you were prescient enough to implant chapter markers in your video project when you first created it, HandBrake can extract specific chapters or groups of chapters. On the commercial side of things, Roxio’s $40 Crunch and Toast Titanium 10 can also convert Video_TS folders, though you can’t extract scenes from them. Well, my favorite tool is $29 iFunia DVD to iPhone 4 Converter for Mac.
